While a true Miami Vice would contain Strawberry and Pineapple, the Miami Nice swaps out the strawberry for guava and omits the pineapple entirely. While there appears to only be one known source pinning the Lava Flow down to the Four Seasons in Maui, it makes a lot of sense that this drink would come from Hawaii. The easiest way to think about this is that the fruit already contains sugar, and it also counts toward the final weight. That's why each degree of Brix counts twice where in the video I only counted it once. Or just get a refractometer, measure the Brix, then use my online calculator: https://makeanddrink.com/brix-calculator/ *Cream Syrup* _from the Tropical Standard book_ 250 grams heavy cream 250 grams sugar 14 ml of a 15% citric acid solution (15 grams citric acid + 85 grams water) _if using my 1% acid solution instead, just use around 7ml.
