While I came across this drink while digging through some internet archives, it also exists and was shared in one of the Beachbum Berry books. The drink is simple, and calls for not only a coconut syrup but milk as well. This was not the first printed reference to the Mai Tai, but it is the oldest recipe that we know of right now. The late 1950s was when the Mai Tai really took off. Travelers from Hawaii returned home wanting one of these Mai Tai and then there were the travel writers claiming the Mai Tai as the best drink from Hawaii. This recipe was apparently given to Mrs. Leone Siedman by a bartender at the Royal Hawaiian Hotel. The drink is very much a Mai Tai, with the big difference that it calls for a hefty ounce of lemon juice in addition to 1/2 oz of lime. I was skeptical at first that this machine would be any different than the MAX or XL models and for the most part it is very similar, but overall, I think the idea of having 2 tanks. And while you could just get two different slushie machines, having 2 tanks in the same machines just means that I am more likely to use both sides. The only downsides I've really had so far is that it's a little bigger than the others and you have twice the cleaning. Wish each tank was a little bigger as well. I then take that number and multiply it by 0.9 (0.85 is more accurate). Add that much sugar. Let macerate overnight in a vacuum bag or ziplock. Then strain through a fine mesh sieve. If you want to get close to the recipe's 5 ½ (165 ml), then I'd use 200 grams of strawberries to 180 grams of sugar.
